My husband made small white beans yesterday and cooked them with chicken gizzards that were absolutely delicious, lots of onions and garlic and cooked them for hours, very good. Lots of people don't like gizzards so you can use salt pork or smoked neck bones or smoked ham hocks and they are good too.
